Excellent dairy reference book

I've read most of the book now and found it to be thorough, well-documented, and consistent. It's a large book, superb quality in terms of print and plates, easily used. It does the best job on the cow piece of the dairy production and processing (I am a veterinarian) a very good job on the processing piece, and perhaps only a good job on the quality assurance piece of dairy processing. I know of no better book that covers all these topics.
